Alex's Gazpacho

Chef Alex Bomba of Main Street Cafe prepared this gazpacho at the market July 30. Refreshing!

Vegan!

Ingredients
6 tomatoes
to taste Hot peppers. Alex used Chilaca
a few Sweet peppers: Alex used New Mexican Heritage 64 and Corbaci
to taste cayenne pepper
to taste salt and pepper
to taste cilantro, parsley, scallions

Step by Step Instructions
  1. Slice tomatoes, cucumber, peppers, and onion.
  2. Blend in blender (for smoother texture) or food processor (for chunkier texture).
  3. Add and adjust seasonings to taste. You can eat right away, but for best flavors refrigerate and make up to one day ahead of time.
