Grits with goat cheese, honey and shiitake mushrooms

This dish was prepared by Jacob Berry, sous chef at Bistro 105 and our guest chef at the market June 25th, 2011. Even folks who said they didn’t like grits thought this was wonderful!

Jacob cooked with these ingredients from the market:
Stone ground grits from Shell Mill
Plain goat cheese from Ziegenwald Dairy
Shiitake Mushrooms from Salamander Springs Gardens
Fresh Rosemary from Bowers Farm

Jacob used bacon fat to carmelize onions in this recipe—but you can make this vegetarian by substituting oil or butter.

Harissa

Harissa is the prevailing condiment of most of N. African cooking, it originated in Tunisia. Harissa is a hot chile paste,and has additional uses; meat rubs,and in stews, couscous, pastas or soups. It will store refrigerated for about a month. Depending on the heat level desired, either use hot chiles such as cayenne, de arbol, kung pao, serrano, or Tunisian baklouti, or milder varieties such as red NuMex chiles or Spanish piquillos.

Lambsquarters Quiche

Lambsquarters is a naturalized spinach relative. Very nutritious! 6 grams protein, 281% DV vitamin A, 111%DV vitamin C, lots of vitamin K…This recipe is delicious and much lower in fat and cholesterol than typical quiches. Feel free to change the egg mixture if you are not concerned about cholesteraol, and to add other vegetables as you see fit.

Paprikash Potatoes
This a a typical Hungarian dish, I’ve enjoyed variations of it in Germany as well. It can be made with a mild ground red chile powder, however it is best with ground paprika. Paprikash goes well with roast pork and sauerkraut or just alone.

Pico de Gallo Salsa
Pico de Gallo is basically a blend of fresh vegetables and hot chile, also known as salsa cruda,salsa fresca, salsa fria or salsa Mejicana. As most salsas, it can be a dip, however it also makes a wonderful dressing on meat dishes. We’ve had it with the Red Chile Stew also included in this recipe section.
